Chef Endo Returns to Jackson



Chef Norihito Endo returns to Kampai JH for a special limited-seating Omakase dinner on February 23rd and 24th. Chef Endo is one of the world’s most renowned Japanese cuisine chefs. His style blends traditional fish preparations with unique takes. "He truly cares about the origin and presentation of each ingredient on your plate; he is one of my favorite chefs and I welcome every opportunity work with Chef and his team," shared Chris Massad, Kampai's executive chef. Chef Endo's restaurant Ebisu Endo was named one of the "best places to eat in Tokyo" by the Los Angeles Times.


Guests will enjoy a multi-course omakase dinner, a chef-curated dinner. Chef Endo knows the origin of each piece of fish, from the farmer who raised it to the method used for wild-caught fish. His passion and commitment to detail create an unparalleled dining experience. Chef Endo is a master of edo-mae sushi and a proponent of "kireaji," (delectableness by cutting) - the idea that the way ingredients are cut greatly influences taste. In a film project titled Update Traditions - Kireaji, Chef Endo’s team interviewed craftsmen across Japan to communicate authentic Japanese knife culture to the world. “When it comes to Japanese cuisine, a knife must do more than just cut - it creates flavor through the act of cutting…Texture, scent, umami, succulence, all the desired elements and nothing but. These are all brought out thanks for kireaji.”


Chef Endo comes from a distinguished lineage of sushi chefs


Chef Endo trained with Chef Takashi Saito of the three-Michelin-starred Sushi Saito before opening Ebisu Endo in 2019. In an Eater.com documentary, he shared, "Having an absolute respect for my masters is important, but at the same time I try to see them as milestones I can go beyond." This belief in constant improvement and a pursuit of excellence is evident in his unique and fresh approach to sushi.
